Vegan Homemade Hobnobs Original Digestive Cookies

Have you ever tried the Hobnobs or original McVitties digestive cookies? No? You really are missing out. Their digestive cookies are quite simple and tasty; but overall, they have a short ingredient list.

When I grab a package of cookies, I generally see an infinite list of ingredients. I wonder to myself: “Are all these ingredients necessary?”. The answer is generally no.

Instead of feeding your body with unnamable food,  you better start to cook a little bit more and enjoy more natural food.

This recipe is vegan friendly and contain only 7 natural ingredients.

 

VEGAN HOMEMADE HOBNOBS ORIGINAL COOKIES RECIPE

TOTAL TIME: 40 MIN

PREP TIME: 10 MIN

REST TIME: 20 MIN

BAKE TIME: 10 MIN  (AT 180°C OR 380°F)

INGREDIENTS FOR: 12 Vegan homemade Hobnobs Original McVitties Cookies

  • 3/4 cup flour
  • 3x 1/2 cup Quick oats
  • 150 ml water (adjust it according to the texture)
  • 1/3 cup cane sugar
  • 1 tsp baking powder (1/2 paquet de levure)
  • 1/2 teaspoon baking soda
  • 5 tbsp sunflower oil

This is it! Pretty natural isn’t it?

PREPARATION:

Preheat the oven to 360˚F (180˚C).

Mix all the dry ingredients together.

Dig a hole in the middle of the dry mixture and add in the center the oil and the water.

Mix it all together with your fingers and then form a ball. Take the time to do it.

Let it rest 20 min in the fridge.

Flatten the dough between two baking papers.

Spread the dough with a rolling pin. When the thickness is around 2cm, you are good.

Shape your digestive cookies with a small cup and place them on a grill covered with baking paper.

Bake in the oven for 10-15 min.

When it’s ready, take it out, and spread them out on a grill. Don’t worry if your digestive cookies are soft, they will harden later.

Enjoy them with a cup of tea or coffee in dessert.
